The American Distilling Institute (ADI) hosted a “Whisky and Moonshine Distilling Conference” this past week, which featured the many up and coming small distillers. One of the biggest challenges facing these small distillers who are making whiskey? Waiting for the whiskey to mature, and the methods they can employ to accelerate the maturation process (using smaller barrels, etc.)
